Veracruz (a city in Mexico) is known for its seafood. This recipe is from this port city and has spiced fish wrapped in lettuce leaves with salsa. This would make for a healthy snack and an interesting way to eat fish!

This Chinese appetiser can be simplistic in it’s ingredients; but, has a sublety of an underlying spice mix. This dish is a little colourful with the pops of green. for a more visual treat, finely chop pieces of red and yellow bell peppers.

Cauliflower 65

Cauliflower 65Cauliflower 65 is a variant of the Chicken 65 which is said to have originated in Chennai at the Buhari Hotel in 1965. Hence the 65 suffix. After a lot of research, I happen to source this original recipe which is devoid of any artificial food colouring.
 
Cauliflower 65 is a medium spicy preparation and I have used the light green non-spicy green chillies. Feel free to use the more spicer green chilli (Jwala) if you need more heat.

Aloo Pakoras

This versatile potato snack is available in every single village, town and city in India. In some places, the batter is a thick paste which encases the sliced potatoes; and Pakoras - Aloo (Sliced Potato Fritters)in other instances, it is a thin batter which forms a light crust around the potatoes. Some households mix in cumin seeds, aniseeds or crushed coriander seeds in the batter; while others add finely chopped coriander or mint leaves which form small speecks in the batter.
 
Whichever way you choose to enjoy this delicacy, this snack is favoured especially when the mercury drops during monsoons and winters.
