Lime, Garlic & Chilli Pickle

This recipe was given to be through my aunt (Sr. Frances). I tweaked the recipe after making a small batch. This pickle is sour, spicy and pungent. The best part is that you can adjust any of these flavour profiles by adding more/less of the relevant ingredients.

Badi Amma’s Bharvaan Laal Mirchi Ka Achaar (Stuffed Red Chilli Pickle)

Badi Amma is my friend’s grandma who makes amazing food. While her dishes are absolutely yummm, her personality is larger-than-ilfe.
 
This pickle is one of her most popular recipes and I would wait for a bottle of these stuffed chillies whenever anyone would come from Badi Amma’s home.

Ginger-Chilli Baby Pok Choy With Cashewnuts In Black Bean Sauce

This is a yummy Chinese main course recipe using the yummy pok choy. The vegetable is stir-fried and then a yummy spiced black bean sauce is mixed in. The topping of the dish with cashewnuts adds a nice crunch to the dish.

Szechuan Sauce

From the Sichuan region in China, this spicy sauce is often used as an accompaniment to snacks szechuan-sauce-2or appetisers. At times, it is also used to spice up a dish.
 
In India, this sauce is indiscriminately used to spice most Indo-Chinese dishes (most of the time, it just drowns the favour of the main ingredients); and has also been misrepresented as Szechuan Chutney.

Thai Sweet Chilli SauceToday, I present some of the sauce recipes that I have in my website. Most of them are fairly easy to make. they can be bottled and kept in the refrigerator to last atleast for a few days. The best part is that these versatile sauces can be used in many dishes.

Szechuan Sauce
This is a spicy sauce from the Sichuan region in China. I have 2 recipes for Szechaun Sauce. Feel free to choose whichever you like.

Bechamel Sauce
Popularly known as White Sauce, Bechamel is a creamy sauce that coats well.

Honey-Chilli Sauce
This is a Thai dipping sauce that is served with snacks or appetisers

Pesto Sauce
There are many variations of Pesto in Italy. While these recipes vary from village to village; this is the Genovese version of this famous sauce.

Thai Sweet-Chilli Sauce
This is another Thai dipping sauce.

Aioli
This is a French sauce which infuses garlic in mayonnaise.

Chilli Chicken (Gravy)

Chilli ChickenThis Indo-Chinese dish has it’s origins from Chinatown in Kolkata. The Hakka immigrants tossed fried chicken nuggest in a soya-based sauce with slit greenchillies (to adapt to the indian palate). And yes, the very Indian garnish of chopped coriander was used. LOL.

Corn-On-The-Cob With Coconut Curry Butter

Corn-On-The-Cob can be had in many different ways. This Caribbean recipe has a very interesting taste which grows on you. The secret is to get the really soft part of the tender coconut (which almost falls off your in your hands) for the butter.
