Nirponos Fry is something that I discovered when I was in Goa. My mum used to make this and I loved it because it was slightly crisp and it had a meaty feel to it – the taste is similar to kingfish! In Goa, making this recipe is quite popular, and often, the locals pluck the breadfruit from their trees and distribute some amongst their neighbours.
I wait for the summers to buy a nice big piece of breadfruit to make this side dish which is best had with a plain dal and steamed rice. Sometimes the most simple of foods is the best.
During a quick visit to Goa, I was staying at my friend’s (Marchita Fernandes) in-laws bungalow, and they were kind enough to give me a nice big breadfruit from their garden.
