Bombay Vegetable Sandwich

Slide10Served by vendors on almost every major road in Bombay (now, Mumbai), the Bombay Vegetable Sandwich is a delightful mix of vegetables with a mildly spiced green chutney. Served plain or toasted, the sandwich offers a burst of flavour with every bite.

Cooking Time : 15 minutes
Portion : 4 portions
White Sliced Bread 8 slices
Potatoes (boiled, sliced into roundels) 2 medium nos.
Beetroot (boiled, peeled, thinly sliced) 1 no.
Cucumber (peeled, washed, thinly sliced) 1 no.
Onion (peeled, washed, thinly sliced) 1 no.
Tomato (washed, thinly sliced) 1 no.
Butter As required
Roasted Cumin Powder As required
Chaat masala To taste
Black Salt To taste
Freshly Crushed Peppercorns To taste
For the Green Chutney:
Coriander Leaves (washed) 1 cup
Mint Leaves (washed) ¼ cup
Chaat Masala ½ teaspoon
Green Chillies 1-2 nos.
Lime Juice (optional) 1-2 teaspoon
Salt To taste

Preparation Method:

1.           In a blender, grind all the ingredients for the green chutney; to a smooth paste using no water or just about 1 teaspoon lime juice

2.          Butter the bread slices evenly and very well. Apply the green chutney to the slices. Place the vegetables one by one over 4 of the slices. Sprinkle the black salt and chaat masala on each one of them. Cover the sandwiches with the other bread slices

3.          Trim the edges of the sandwiches and slice the sandwich into triangles/rectangles

4.         Serve immediately with tomato ketchup and the green chutney.
