Conchiglie is a shell-shaped pasta and it can be ideally paired with a heart ragu. I decided to make a nice thick beef ragu. Trust me. A hearty ragu gently envelopes the Conchiglie and the chunky juicy bits of beef were a bonus!

As the name suggests, this absolutely tasty pork dish is from Coorg (now known as Madikeri). Its best had with Neer Dosa. The specialty of this preparation is that Kachumpalli (the local black vinegar) is used to flavour and colour the dish.

Tisreo Sukhem (Clams In Spiced Coconut) – Goan Style

Tisreo SukhemThis is one of those dishes that I used to love to have as a child. The coconut and the spices add a unique flavour to the clams which enhances the overall taste of the dish. I still like slurping each clam shell – even though it feels like an effort.
