Kori Rotti (Chicken Curry With Rice Crisps)

This is a very popular Mangalorean dish. No Mangalorean wedding Kori Rotti (Chicken Curry With Rice Crisps)is complete unless Kori Roti is part of the buffet. Even though it seems to be pretty basic and plain, there is something that is so unique and childlike to dig into this dish with your fingers. The crispiness of the rotti with the coconut curry poured on top…..I mean, I just go crazy. And so do my friends. It’s a very moreish experience and is absolutely no fun when eaten with cutlery.

Kheema Matar (Spiced Mince & Peas)

As a child, I remember my mom and aunts adding peas and carrots in the mince so that we can have our Kheema Mutter (Spiced Mince & Peas)vegetables. This recipe is a typical Indian mince preparation using peas. If you desire, you may add diced potatoes or even carrots.

Spiced Fruit Salad

Spiced Fruit SaladThis version of the easy-to-make fruit salad is ideal for parties. Feel free to experiment with you own spice flavours, but keep it light so that it is not too strong and overpowers the fruit taste.

Chilli Chicken (Gravy)

Chilli ChickenThis Indo-Chinese dish has it’s origins from Chinatown in Kolkata. The Hakka immigrants tossed fried chicken nuggest in a soya-based sauce with slit greenchillies (to adapt to the indian palate). And yes, the very Indian garnish of chopped coriander was used. LOL.
